Yay!! The sweetest and most delish way of preparing vegetable spaghetti that your family or guest will love and also want more. Eating pasta this way is more healthy and nutritious considering the veggies added to it. If you’re a lover of vegetable spaghetti gather here and give it a try
Spaghetti (one pack)
1 cup Pepper/tomato Sauce
Ground beef/minced beef
3 Tomato large
2 green spring onions
2 Bay leaves
mixed vegetables(carrot, green pepper, green peas and green beans)
3 Tbsp vegetable Oil
Salt to taste
2 Tsp curry powder
1 Tsp Thyme
2 stock cube
Instructions for making a vegetable spaghetti
Stir fry the Onions, spring onions and bay leaves in the Oil for about a minute,then season with curry powder, stock cube, Thyme and salt to taste.
Add the ground beef and allow it to cook until it’s almost done.
Add the sauce and cook for a while for about 3 minutes, then add some water to thin it out.
Break the spaghetti into 3 parts (or as you like it)and add it into a hot boiling Water.
Add salt to taste and cook the spaghetti for about 8 minutes, then take it off the heat and drain the Water.
Add the boiled pasta to the sauce together with the mixed vegetables(pre cooked for about 5 minutes) and sliced Tomatoes.
Allow it to come to a simmer for about 3 more minutes and take it off the heat.
The most important thing to take note of when making a vegetable spaghetti is timing. Your pasta does not need to be soggy which is why paying attention to the timing will pay off. Another thing is cooking the vegetables moderately, not undercooked or overcooked either. You need to still retain the freshness and the nutrients contained in the vegetables.
